Homemade Oreos
Ingredients
Wafers
1 ¼ cups all-purpose flour
½ cup cocoa
1 teaspoon baking soda
¼ teaspoon salt
1 ¼ cups sugar
½ cup plus 2 tablespoons unsalted butter
1 large egg
¼ teaspoon baking powder
Filling:
¼ cup unsalted butter (room temp)
¼ cup vegetable shortening
2 cups softened powder sugar
2 teaspoons vanilla extract
Directions
1. Heat over to 375°. Mix flour, cocoa, baking soda, baking powder, salt, and sugar. Add butter and then egg. Continue mixing until dough comes together in a mass. 2. Take rounded teaspoons of batter and place on parchment paper-lined baking sheet. Slightly flatten dough. Bake for 9 minutes, rotating once for even baking. Cool. 3. Place butter and shortening in mixing bowl and gradually beat in sugar and vanilla. Turn the mixer on high and beat for 2-3 minutes until light and fluffy. 4. Using a zip-loc bag with clipped corner, pipe teaspoon-size blobs of cream into center of cookies. Place another cookie on top of cream and slightly press.
